Our Story
I have always loved barbecue. The smell, the taste, the culture and history always intrigued me. In 2013 I had not really cooked much of anything outside of steaks and burgers on a grill but I decided I wanted to try making BBQ, pulled pork specifically.
I researched smokers to see what was the best entry level smoker to get. I made the decision to get an Oklahoma Joe Highland offset stick burner smoker. After many Youtube videos I figured out how to season it and do my first cook!
Looking back on my early days of learning, I was making all the mistakes as most newbies would - poor airflow, dirty smoke, terrible fire management. As I kept learning and making adjustments I got better and better.
Fast forward a few years I wound up winning a backyard style competition!
I have evolved from the Oklahoma Joe and have built my own traditional cinder block smoker that allows me to cook a lot more meat at once and stay true to the rustic purity of cooking - wood, fire, smoke.
My current smoker has evolved again as I have upgraded to a custom built Moberg Smoker. In the BBQ world, a Moberg smoker is the most top of the line smoker that exists. The top BBQ joints in the world are running Moberg’s. I figured if I was going to produce the best Que that I will need the best equipment! It of course is pure wood and fire driven.
I now cook across various other smokers and have mastered the use of fire and wood to cook meat to produce some exceptional, traditional Que.
I have taken various BBQ masterclasses from some of the best Pitmaster’s in the world. We have traveled throughout Texas working with Pitmasters to refine our techniques and ensure we are cooking the best, most authentic product we can.
My wife, bless her heart, has been pulled into this barbecue world in a whirlwind fashion! She is the backbone of our recipes and processes in the kitchen! Without her, none of this would be possible!
I planned for my retirement years (still a long way away) to be when I would pursue doing something more formal, as in selling BBQ to the masses. Tragic, unexpected passing of family members spurred something in me, I felt compelled to not allow my passion to be put on hold. I decided to take steps to pursue bringing great Que to the people. Each day we have been making progress to make this all a reality and we are so excited to be at a point to provide people with exceptional barbecue!
We are in constant pursuit of the best ingredients. We promise you, we will deliver the best, traditional Texas and South Carolina style craft barbecue and cut absolutely no corners in the process!
