Tay Nelson of Bobby’s BBQ!
In July of 2022 I participated in a masterclass by one of the BBQ greats, Tay Nelson of Bobby’s BBQ in Fountain Inn, SC. This class was amazing and provided an incredible baseline of how to prep and cook some of the most popular cuts of meat. The focus is a blend of Central Texas and South Carolina style BBQ using large 1000 gallon offset Moberg smokers. But don’t be intimidated by the large smokers, Tay does a great job of explaining how any backyard pitmaster can use the tools that they have at home to get great results!
The Meats - Trim’n, Wrap’n and Smoke’n
The primary meats we covered were brisket, pork butt’s, and pork ribs. The secondary meats were sausage and chicken.
With each meat, Tay demonstrated how to properly trim and apply rub. Each student had their own meat to prep to follow along as the class is very hands on. At the end of the class all the meat we cooked we split and was able to bring home for our friends and family to enjoy!
Wrap Up
Tay is an exceptional Pitmaster but more importantly, he is an incredible human! He took time to share his story and teach all of his secrets that make his food great! I have taken the insights I learned from him and applied them to my cooks and it has stepped my food up!
