The man, the myth, the legend…. MYRON MIXON!!
In March of 2023 I was lucky enough to attend Myron Mixon’s BBQ Cooking School down in Unadilla, GA. To say it was one of the highlights of my BBQ journey so far is putting it mildly.
If you have seen Myron on TV with the brass, no nonsense attitude, let me assure you, its even more intense in person! He is the most down to earth, call it as he sees it and confident man I have ever met! In all honesty, he reminds me of my late Dad. They even look alike!
I could write a book about my whole experience and what I learned there but I will keep this blog short and provide a summary below.

Learn’n and Prep’n
As a group, we prepped over 800lbs of meat. Chicken legs/thighs, Pork Butts/Ribs, Beef Ribs, Brisket, Turkey and of course Whole Hog!
We also made numerous sauces, injections and brines.
Myron is known for his hot and fast method and all time/temp and prep was geared towards this. The only thing that he does not do hot and fast is whole hog, that is low and slow.
At the end of the last day we spent time learning competition prep and boxing - great secret tips came out of this portion!
We were fed twice per day and the food was some of the best I have ever had!
Whole Hog
Learning the process from beginning to the end of Whole Hog is a portion of the class that ill take with me forever! More time was spent on this than any other piece of meat. From choosing the correct hog, to injection, trim, rub, smoking - it was all covered!
The end product was the best pork I have ever ate in my life!
Whole Hog Prep!!
The work that went into getting this hog to this point is insane!
After 20 hours of low and slow this beauty is ready!
When I say that eating this whole hog is life changing, I mean it! The absolute best pork I have ever had in my life!
Final Thoughts
I would recommend this class to anyone who is into BBQ! The comradery and fellowship of meeting and talking with so many like minded people is invaluable!
